Festival is a sweet cornbread which is normally fried and eaten as an accompaniment with a number of Jamaican dishes. Last week I shared my recipe for the perfect jerk pork, which goes great with freshly made festival. I have modified the recipe slightly so these can be made baked in the oven rather than deep frying which is the traditional way. I may be biased but I think they taste just as delicious, and I don’t have to worry about using lots of oil to get them crispy.

Ingredients:
- 100g cornmeal flour
- 200g self-raising flour
- 1 tbsp baking powder
- 50g sugar
- 1 tsp nutmeg
- 50g butter
- 5 tbsp greek yoghurt
- 100ml warm water
Method:
- Add all the dry ingredients into a large mixing bowl, stir until everything is mixed together
- Add the butter and rub into the flour mixture
- Make a well in the middle of the bowl and add the greek yoghurt
- With one hand, start to combine the ingredients to start to form the dough, while slowly pouring in the warm water.
Tip: The dough should feel soft and come together easily. It should not stick to your fingers. - Separate dough into small balls and roll between your hands into an oval shape
- Place on a baking tray and bake in the oven at 180 C for 20 minutes until golden
