Festival

Festival is a sweet cornbread which is normally fried and eaten as an accompaniment with a number of Jamaican dishes. Last week I shared my recipe for the perfect jerk pork, which goes great with freshly made festival. I have modified the recipe slightly so these can be made baked in the oven rather than deep frying which is the traditional way.  I may be biased but I think they taste just as delicious, and I don’t have to worry about using lots of oil to get them crispy.

Ingredients:

  • 100g cornmeal flour
  • 200g self-raising flour
  • 1 tbsp baking powder
  • 50g sugar
  • 1 tsp nutmeg
  • 50g butterIMG_9970.CR2
  • 5 tbsp greek yoghurt
  • 100ml warm water

 

Method:

  1. Add all the dry ingredients into a large mixing bowl, stir until everything is mixed together
  2. Add the butter and rub into the flour mixture
  3. Make a well in the middle of the bowl and add the greek yoghurt
  4. With one hand, start to combine the ingredients to start to form the dough, while slowly pouring in the warm water.
    Tip: The dough should feel soft and come together easily. It should not stick to your fingers.
  5. Separate dough into small balls and roll between your hands into an oval shape
  6. Place on a baking tray and bake in the oven at 180 C for 20 minutes until golden
